Mark Bittman Was Right


I did it! I cooked a 10lb turkey in about 45 minutes just like Mark Bittman promised. It was so easy, it doesn't even feel like I cooked a turkey. We cut the backbone out. It was a bit gruesome but not too hard. Then we flattened the bird and doused it in butter, which turned out to be excessive but yummy. Added some herbs, garlic, pepper and in the oven it went. I basted it a few times. Extended the cooking time by 20 minutes. And dunzo and delish. I opted to leave out the stuffing this time, but next time I'll lay it beneath the turkey. Try it!!
