Egg Pitzi


Made a delicious quiche last night. Instead of a pastry crust I used potatoes. It was way easier and so yummy.

The recipe:
2 potatoes thinly sliced
7 eggs
1/4cup milk
steamed broccoli
shredded cheddar
basil

Pre-heat oven to 375. Lay the sliced potatoes down on your pie plate. Bake for 10 minutes. Meanwhile, steam up your broccoli, shred your cheese, tear up the basil and beat the eggs with milk.

To assemble, sprinkle broccoli over the potatoes, lay down the basil and sprinkle on some cheese. Pour in the egg mixture, finish with another sprinkling of cheese. Bake for 35 minutes.

Serve with an arugula salad dressed with lemon juice and olive oil.
