I love roast chicken. It's my favourite comfort food of all time. Frankly, if I had to choose a last meal it would be a serious toss up between roast chicken and steak. Anyways...this recipe came courtesy of Sweet Paul. It's so easy to cook - just mix apricot jam with maple syrup - baste and bake. For added flavour I stuffed clementines into the cavity and dressed the chicken with roasted potatoes. The recipe calls for a cream sauce, but I loved it just the way it came out of the oven - golden, juicy and crispy on top.
