Flo's Nuts

To pay homage to a dear friend today we baked her famous Candied Pecans. Flo was known for many things - a kind heart, a fabulous cook, a great Mom and these wicked delicious nuts. The recipe looks simple, but the candying part does take time and a watchful eye.

Recipe:
A lot of pecans (6 cups)
1/3 cup water
1 cup sugar
2 tsp cinnamon
1 tsp kosher salt

Add everything into a stockpot. Cook on medium for 15 minutes. Stir the whole time. Be sure to stir up the crystallized bits that form on the bottom.

Then pour the nuts onto cookie sheets with high rims. Spread them out thin. Broil the nuts at 1 minute intervals (NOTHING LONGER). Every minute, take them out and stir them around. The nuts will turn golden. It takes about 20 times to get them right, course this all depends on the heat of your broiler. Nuts burn super easily, so please keep your eyes on them. I used a timer just to be careful.

Let nuts cool. Store in a container. Freeze them if you like. I of course eat them all instantly. They are so amazing. Thank you Flo, for everything. XO
